Banana Berry Oatmeal Muffins

Ingredients:

1 ½ banana (ripe)

½ cup strawberries (or blueberries)

2 ½ cups oats

¾ cup Greek yogurt (vanilla)

1 tsp vanilla extract

1 tsp cinnamon

 1 tsp baking soda

nuts (optional)

Instructions:

Step 1: Preheat oven to 400ºF.

Step 2: In a food processor, add oats and pulse until smooth.

Step 3: Add to a medium mixing bowl along with baking soda, and cinnamon; whisk to combine. Set aside.

Step 4: In a large mixing bowl, mash the bananas and strawberries, thoroughly. Whisk in yogurt, and vanilla extract. Stir until well-blended.

Step 5: Add the dry ingredients to the wet ingredients and stir until a thick batter is formed.

Step 6: Spoon batter into a greased muffin tin, filling each section about 3/4 of the way.

Step 7: Bake for 17-20 minutes, or until an inserted toothpick comes out clean.

Step 8: Let cool slightly before eating.
